Crispy Coconut Flake Granola (The Best Homemade Granola Recipe)

I kid you not, this is the best crispy homemade granola. I make this regularly so we always have a jar of it available in the pantry, because besides being a perfect treat to grab and eat, it also tastes so good on yogurt, oatmeal, and smoothie bowls. I can’t stand food blogs that ramble on about a recipe for ten paragraphs before you get to the actual recipe, so I’m going to just cut to the chase. I don’t think I’ll need to convince you – try it out and let it speak for itself.

To make the granola, you will need –

  • 1 1/4 cups of large coconut chips, unsweetened

  • 1 cup of rolled oats

  • 1/3 cup of pepita (pumpkin seeds)

  • 1/4 cup of hemp hearts

  • 2 Tbsp. of raw sunflower seeds (unsalted)

  • 1 Tbsp. of coconut sugar

  • 3/4 tsp. of cinnamon

  • 3 Tbsp. of coconut oil

  • 3 Tbsp. of maple syrup

  • 1 Tbsp. of almond butter

  • 1 tsp. of vanilla extract

Preheat the oven to 300 degrees. Line a rimmed baking sheet with parchment paper. In a large bowl, combine the dry ingredients and mix well. In a saucepan, melt the coconut oil over low heat. Remove from the heat and whisk in the other wet ingredients until smooth. Pour the wet mixture over the dry mixture and use a spatula to mix it all together until everything is well coated.

Pour the granola onto the baking tray and spread it into an even layer. Pop it in the oven for 10 minutes. After the initial ten minutes, remove the tray, mix the granola, reflatten into an even layer, and return to the oven for 3 minute bursts with stirring in between for an additional 10 minutes. 

Once it is evenly golden, remove it from the oven and allow it to cool on the tray. The granola will firm up, allowing it to get nice and crispy. Once it is completely cooled, use a spatula to break it up into chunks and transfer it to a container for storage. The granola will keep for a couple of weeks if it is well-sealed (but that’s assuming it even lasts that long).

We love serving this granola on greek yogurt with sliced berries as an afternoon snack – the greek yogurt is a great source of protein, the berries offset the bitter taste of the yogurt, and the granola adds a ton of nutritional benefits that make this a really satisfying snack.
