Peppermint Marble Bark

I kid you not, I made this within five minutes. Because guess what? I have a seven month old baby who is going through intense separation anxiety and I was still able to whip up a batch of this before she noticed I had popped into the other room. You may not have a needy baby to contend with but I do bet that you have a busy holiday season ahead of you, so I just wanted to say that so you know that you do in fact have time to make this amongst the bustle of your day.

It barely feels worthy of a written out recipe but because I hate reading through the inevitably long-winded ramble before a recipe post, I’ll write it out in recipe format so you can just skip there like I do. In fact, let’s just skip there together.

You will need - 

  • a bag of semi-sweet chocolate chips

  • a bag of white chocolate chips

  • a small handful of peppermint candies (5-6), unwrapped and crushed

  • a few peppermint patties (5-8), chopped

To make them -

Line a small pan with parchment paper. Melt the semi-sweet chocolate in a double-boiler and at the same time melt the white chocolate in another double boiler (you’re welcome to use a microwave if you prefer but I find it easier to control with the double-boiler method). If you don’t know what a double-boiler is then put a small amount of water in a pot, place a bowl that fits around the rim of the pot on top (not touching the water level though), and bring the water to a boil as the steam melts the chocolate in the bowl. Stir it as it melts until it is fully melted. 

Dump the semi-sweet chocolate onto the parchment lined pan and spread it fairly thin and even. Randomly dump globs of the white chocolate on top and use a spatula to swirl the two together until a nice marbled pattern is formed. Don’t overmix them. 

Sprinkle on the crushed candies and the chopped peppermint patties. Place in the refrigerator until hardened. Once it is solid, break it apart into small-sized chunks. Store it in the fridge in an airtight container.

And just as a note: as with every food recipe, you get what you pay for! The better quality the ingredients, the better the final taste. If gifting, I recommend splurging on the good chocolate, but at the very least, simply the brand name stuff will do. 

Perfect for snacking. Pretty enough for gifting. Trust me, it’s worth the five minutes.
